Eagle Eye Produce, a leading grower-shipper of potatoes, captured six month’s worth of footage on time-lapse cameras showing its potato fields in eastern Idaho from planting to desiccation and finally to harvest.

“Every harvest season, each of our potato growers works around the clock to make sure our potatoes are a perfect size, texture and density,” said Dallin Klingler, marketing and communication manager for the Idaho Falls, ID-based company. “We grow 25,000 acres of premium potatoes each year. That's over 500 million pounds of fresh russet, red, yellow and white potatoes every year out of the Western United States.”

Klingler added thatEagle Eye believes it is extremely important for people to know where their food comes from and understand the process that gets their fresh produce from the farm to their plate. “We are always looking for new ways to connect our growers to our customers, and I feel like this project helps bridge the gap between the farm and fork,” he said.
